More than just sweet: Caramelised sugar syrups are characterised by a pure caramel flavour that, depending on the syrup, can range from mildly aromatic to pleasantly bold. They are produced by the gentle heating of sugar and are ideal for refining the flavour of food. Caramelised sugar syrups are classified as food and not as colouring agents.
